Gabrielle’s Flagship Wine
History of CASK 321: The 2003 Vintage, is her first release from the newly established winery and is a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc. Cask 321 symbolizes the blend ratio, which will remain the same evermore in honor of the winery’s founding. Equilateral (Cask 321) Cabernet Sauvignon is a signature wine for Vintner, Gabrielle Leonhard. The label has gone through a name evolution: 2003 was called Equilateral, then in 2004 & 2005 Equilateral Cask 321 and today simply CASK 321.

The 2003 Vintage: A complex year with late rains, a cold April, then a normal Napa summer ending with heat spikes creating an early harvest. For those on top of their vineyard management, it was a great Cabernet Sauvignon vintage- big but balanced wines.

The wine welcomes you with California bold fruitiness of cassis and ripe cherry, then finishes with the finesse of classic Bordeaux. Rich chocolate and vanilla, plus herbal earthy notes and cedar add lively interest California fruit expression is structured within the finesse of classic Bordeaux winemaking style. . it has a firm structure with silky texture, with a pleasant grip of balanced tannins.

The Cabernet vineyard is located off Maple Lane just north of St. Helena and the Cabernet Franc was grown in Pope Valley. Hot summer days ripen fruit to optimum varietal attributes and cool nights preserve acidity- resulting in an age-worthy wine with great food pairing attributes.

Skeptical of popular the Cabernet Sauvignon and chocolate pairings- the Cabernet is often not well matched to the chocolate and the wine flavors become distorted- Gabrielle was worried when she saw her Cabernet paired with a chocolate dessert at a wine dinner. It was fabulous!!! The secret- dark chocolate with 60-70% cocoa, (NO MILK CHOCOLATE) and no cream topping. It was a savory dessert- a chocolate teacake with a bittersweet chocolate chipotle drizzle. Gabrielle was sold and Cask 321 (the name of this Cabernet blend in future vintages) had a permanent food pairing. Also serve with grilled lamb with roasted garlic, saltimbocca, rib eye steak and grilled buffalo steak.
