THE WINE:
Gabrielle’s Flagship Wine
History of CASK 321: The 2003 Vintage, is her first release from the newly established winery and is a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc. Cask 321 symbolizes the blend ratio, which will remain the same evermore in honor of the winery’s founding. Equilateral (Cask 321) Cabernet Sauvignon is a signature wine for Vintner, Gabrielle Leonhard. The label has gone through a name evolution: 2003 was called Equilateral, then in 2004 & 2005 Equilateral Cask 321 and today simply CASK 321.
The 2004 Vintage: The Cabernet Sauvignon was harvested in mid September, as the philological attributes said the grapes were ready. The Cabernet Franc was harvested early October, as longer hanging increase the fruitiness of the wine.

VINEYARDS:
The Cabernet vineyard is located off Maple Lane just north of St. Helena and the Cabernet Franc was grown in Pope Valley. Hot summer days ripen fruit to optimum varietal attributes and cool nights preserve acidity- resulting in an age-worthy wine with great food pairing attributes.

FOOD PAIRING:
A perfect Cabernet from main course to dessert. Serve with grilled lamb with roasted garlic and lavender salt, peppered steak and venison or wild boar. Then finish your meal with a fantastic dark chocolate dessert (not milk chocolate, as the sugar in this chocolate is not a good match to Cabernet).
