History of CASK 321: Equilateral Cask 321 Cabernet Sauvignon is a signature wine for Vintner, Gabrielle Leonhard. Her first release- a 350 case production of the 03 vintage- was a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc. Cask 321 symbolizes the blend ratio, which will remain the same evermore. The label has gone through a name evolution: 2003 was called Equilateral, then in 2004 & 2005 Equilateral Cask 321 and today simply CASK 321.
Each one of GABRIELLE Cabernet Sauvignons carry a name distinctive to the wine and are rooted in Gabrielle’s winemaking philosophy. EQUILATERAL expresses the balanced triangle of the wine experience: beautiful aromas…a rich mid-palette of complex fruitiness playing against elegantly structured tannins…a lingering finish. Cask 321 is a hearty Cabernet for those who love the earthiness of Cabernet Franc.
The 2005 release marks the first time Cabernet Sauvignon is sourced from the family’s organically grown O’Connell Family Estate Vineyard.
The 2005 vintage is highly regarded for its elegance and finesse plus long age worthiness. This wine shows the earthiness of Cabernet Franc and the polish of Cabernet Sauvignon. Dark cherry, dark chocolate, cassis, tobacco and sage. The oak flavors and tannins are elegantly integrated with the fruitiness the wine.
VINEYARD: The Cabernet Sauvignon is from the Creek Block of the O’Connell Family Estate Vineyard. The fruit from this block is prized for its ability to harmonize the flavor components of a wine into a seamless integrated tasting experience- smooth and elegant in the mouth. The Cabernet Franc comes from Pope Valley, where optimum ripening brings out the rich earthiness of the varietal.
If you like Cabernet and Chocolate- dark chocolate with 60-70% cocoa, (NO MILK CHOCOLATE)- this is your wine! But equally good are all cuts of beef, game meats and lamb.
