CASK 321 History: Equilateral Cask 321 Cabernet Sauvignon is a signature wine for Vintner, Gabrielle Leonhard. Her first release- a 350 case production of the 03 vintage- was a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc. Cask 321 symbolizes the blend ratio, which will remain the same evermore.

The 2007 vintage has an intellectual restraint that translated into consummate sophistication. Popular with wine collectors who appreciate the elegance of a wine that reveals itself step by step with complex nuances.

TASTING NOTES:
This wine shows the earthiness of Cabernet Franc and the polish of Cabernet Sauvignon. This fruit forward wine has aromas and flavors red fruits- cranberry and cassis and dark cocoa, finishing mild pepper. The soft oak flavors and tannins are well integrated.

VINEYARD:
The Cabernet Sauvignon is sourced from the family’s organically grown O’Connell Family Estate Vineyard Creek Block. The fruit from this block is prized for its ability to harmonize the flavor components of a wine into a seamless integrated tasting experience- smooth and elegant in the mouth. The Cabernet Franc comes from Oakville, located mid-valley, where hot mid-day temperatures ripen the fruit to accent the its rich earthy notes.

FOOD PAIRING:
If you like Cabernet and Chocolate- this is your wine- but only dark chocolate. We recommend 60-70% cocoa! It compliments Prime Rib and Filet Mignon beautifully.
