Gabrielle Limited wines are produced from sustainably and organically grown grapes and are handcrafted with minimal handling and manipulation: The grapes are fermented in small batch T Bins, punched down by hand, and bottled unfiltered or lightly filtered. Each varietal and vineyard block is fermented and aged separately, providing Gabrielle ultimate selection to achieve the most elegantly balanced wine.

THE WINE:
This brawny, bold yet elegantly finessed Cabernet Sauvignon was inspired by a stunning Venetian blown glass stallion; its mane and hoofs encrusted with sterling silver. Vintner, Wayne O’Connell, a 4th generation rancher whose grandfather founded the California Cattleman’s Association, had to have it! He named it Silver Stallion and declared,” I will have a wine named after this amazing statue to honor my heritage.” Each bottle is hand numbered.

The 2012 vintage has a very elegant style. The first time addition of Merlot gives the wine depth and smoothness.

TASTING NOTES:
A celebration wine for entertaining and special occasions. Enjoy aromas and flavors of red fruits, coffee and tobacco within an elegant structure and refined tannins.

VINEYARD:
Cabernet Sauvignon is from the organic O’Connell Family Estate Vineyard Creek Block. Its soil structure is sand and gravel, a result of flooding from Dry Creek, providing highly structured fruit, with clearly defined flavors. The Malbec is from Oak Knoll and the Merlot from Rutherford.

FOOD PAIRING:
When it is time for an elegant party, nothing beats a Cabernet Sauvignon in a magnum. It comfortable serves 6. Serve with classic Beef cuts.

36 months in new and once used French Oak of medium plus toast
